Themed Works-For-Me Wednesday This Week!
I forgot to mention this earlier (oops), but this Wednesday is another themed edition of Works-For-Me Wednesday. The idea for this week's theme comes from reader Lysa TerKeurst.
It's 5:15 pm, the kids are hungry, you have a headache, hubby is almost home, and the pantry has three things in it. What is your BEST last-minute meal recipe? Share with everybody this week. We'll call it Works-For-Me Wednesday: The What-Do-I-Fix? Edition. Or we could just simplify and call it WFMWTWDIFE. Yeah. That's much simpler.

My favorite quick and easy meal consists of Uncle Bens Rice (the microwavable kind), diced ham, and peas (or mixed vegetables). All three items can be heated in the microwave separately and then combined together in one big bowl. Serve with soy sauce or not and you have yourself a meal in less than 10 minutes. I usually also serve it with a side of fresh fruit only because my family loves fruit and I typically have it on hand. My family loves this dish so I typically serve it at least once a week.

In 12 years of marriage I don't think we ever had food delivered, so I know that would not be one of our options.
A lot of my meals are shorter prep time ones - b/c that's just my style. I remember when we were first married my dh said he didn't want me to have to spend hours in the kitchen preparing fancy meals.
I think he regrets that comment now :)

Umm....hubby makes dinner! Also known as hitting the drive through on the way home from work or calling for pizza!

Here's great one for those who can tolerate eggs. This takes as little as 15 minutes.
Omeletes-In-A-Bag
Put no more than 2 eggs in a quart sized zipper freezer bag. Shake to combine them and then add any ingredients that you have on hand (cheese, ham, onions, etc.). Each person can create their own combination. Seal the bags and place them into boiling water for exactly 13 minutes. Usually, 6-8 omelets can cook in a large pot. Remove bags, open and VOILA! Custom omelets for everyone in 13 minutes!

Lysa TerKeurst is wonderful!!! She spoke at our church last fall and I recently heard her again on the Girls Get-Away Cruise.

Always have a couple cans of 'decent' soup around - FAST to pop open and heat up. Keep a frozen pizza around for times like this too (be sure to replenish when you use those!).
Fajitas are really quick, as is spaghetti if you've got a jar of sauce. Hamburgers, hotdogs.
Breakfast for dinner (we do this about once a week) - pancakes, waffles, french toast, whatever.
You can always call and say, "Honey, will you cook tonight? Sure, Wendy's would be great." :)

We do bacon (or ham) egg and cheese bagels in a pinch. SO EASY AND FAST!
First cook up some bacon or ham (fry or microwave). Then you crack an egg into a bowl and scramble it. Stick it in the microwave for about 40-45 seconds. Toast a bagel. Put the egg, meat, and a slice of cheese on the bagel and you're done.
Nothing like having breakfast for dinner! :)

Grilled chicken pasta.
Three ingredients at its most basic form.
Grilled chicken (which I make in obscenely large quantities as weather and budget permit), penne pasta and sauce of choice. I usually have mine with a spritz of olive oil and coarse ground black pepper.
It's a nice, quick & easy meal that is easy to dress up with cheese, mushrooms and veggies.
