This is the third recipe I've posted in as many weeks, which can only mean one thing: our world is coming to an end. And actually, I think I might have posted this one before, but it bears repeating.
With all the nasty weather around, these are perfect days for curling up with a big bowl of soup (ideas here) and this cornbread. It's so absolutely scrumptious that you could just about plop in a scoop of ice cream and call it dessert. If, you know, ice cream tasted good with corn.
TO-DIE-FOR MEXICAN CORNBREAD:
2 pkgs Jiffy cornbread mix
1 med onion, chopped
2 cups shredded cheddar cheese
1 can cream-style corn
1 1/2 cups sour cream
4 eggs, beaten
1/2 can of Rotel, drained (include the whole can, drained, if you like it extra spicy)
1/3 cup vegetable oilMix that together until it's a big gloppy mess. Pour into a greased 13x9 casserole dish, bake at 350 for 50-55 minutes. Serves 12 or more.

Maybe corn doesn't taste good with ice cream but your cornbread looks like it would taste good with a taco salad with a generous dollop of sour cream (which I like about the same as ice cream - though in different circumstances, of course ;+)

that sounds delicious. i use the krusteaz fat-free cornbread and add a can of creamed corn (no longer fat free, i guess) and a handful of shredded cheese...sometimes i add a can of chiles. i'll have to try the onions and the rotel:-) thanks!

I created something very similar for my bunch. They absolutely love it!! I have to buy Rotel by the case because we go through so much. I also buy Jiffy by the case and keep it in the freezer when it is on sale. Jiffy Cornbread is the best!!!
Hope ya'll are doing okay in the NE part of the state. School is in session tomorrow for our town but OKC is out and the other surrounding areas. It looks like a tornado has hit most of the neighborhoods.

I'm always looking for good cornbread recipes and this one sounds awesome. Do you reckon' you could substitute just regular 'ole tomatoes if you didn't like spicy food?

Corn in icecream. Hmmm, actually that is a very popular flavor here in Thailand. Bet you didn't know that corn was a dessert, but yessiree, corn ice cream is a hot seller here. KFC even sells a corn sundae! Some of our other look but don't eat flavors are: Taro, Green Tea and Red Bean.
So go ahead an scoop a dollop of ice cream on that cornbread, you may like it! :)

I just found out at a weekend potluck that it's a thing around here to put syrup on cornbread. I still favor honey, but it was something new to try, and I was the only one in the room that had never had it that way!

I do plenty in the kitchen, and the weather here is snowy, icy, rainy, so your cormbread sounds dee-lish, except:
1) I live in Toronto, Ontario, you know, up north, and I have a feeling your fave Rotel will not be on the shelves. What size of can are you using half of? I can try to make a mix of diced, canned tomatoes and canned green chilies.
2) I'll have to use another brand of cornbread mix—what is the number of cups that 2 packs of Jiffy come to?
Once I get your response, it's off to the store.

I just made the Mexican Cornbread for my women's bible study tonight and of course I had to try a piece. It is wonderful, I am not a big cornbread eater, but this is great!! Thanks for the recipe!!!
