Welcome to WFMWTWDIFE! (That's "Works-For-Me Wednesday: the What Do I Fix? Edition", for those of you who are unable to speak in acronyms.)
We've all had days like this (if you haven't, then really, I don't want to hear about it): The day has been crazy, kids have too much homework, you have a sinus headache, laundry is piled high, you've been too busy to get to the store, 5:15 rolls around, and your in-home cook hasn't shown up yet.
That's when you remember that you don't have an in-home cook, and feeding that rag-tag bunch is somehow your responsibility.
I know, the obvious answer is "carryout", but lets imagine that you can't. Let's imagine that an asteroid struck your house yesterday and melted your car. And while we're at it, let's imagine that giant bread-loving aliens invaded earth and stole all our bread, so sandwiches are out. You have to fix a meal. What are the catch-all, quick-and-easy-dinners-that-still-manage-to-taste-decent that you keep on hand?
Here are mine:
The Recipe Which Has No Name
1 lb cooked ground beef
1 can Rotel
1 Rotel can-full of rice
2 Rotel cans full of water
1 beef bouillon cube
Simmer, covered, for about 30 minutes. Slop it on a plate. Sprinkle cheese on it, if you want.
(You should know that "sprinkle cheese on it" is the proper Southern cook's mantra. That, or, " stir in some Miracle Whip" or "add cream of mushroom soup").
Other quick meals for which I try to keep ingredients on hand:
Grilled cheese sandwiches
Tomato soup
Apple salad (chopped apples with Miracle Whip stirred in. See? Told you.)
A couple of packages of these:
plus spaghetti sauce and easy garlic bread equals my kids' FAVORITE meal.
Hamburger night (frozen burger patties + frozen french fries)
Breakfast for dinner (any number of breakfasty combinations)
Taco night (another big favorite around here)

This is a great theme idea...I'll be bookmarking this one.
We are also a grilled cheese and tomato soup family. I'll often make quesadillas instead. This is pretty much a standard Sunday night meal.

You and I should eat together, or shop together, or both! Our meals look VERY similar! Grilled cheese, tomato soup, and apple slices (never thought of the "salad"), spaghetti night, hamburger night (on the George Foreman grill), and tacos (you ought to check out my dip night if you like Mexican food).

Um, I think your last minute emergency meals are the same as our standard menu around here, except that no name recipe, my kids would gag if I put that in front of them (though I think it sounds good!). I'm a pathetic slacker when it comes to making dinner, I really should work on that!

Okay, here's mine (I don't want to go through the hassle of Mr. Linky, not for number 86...LOL!)
Jill Bond wrote a book called MEGA COOKING and your question here is the same question she asks in the opening of her book! I have to confess, I'm one of "those" who DOESN'T HAVE DAYS LIKE THIS but not because I'm supermom...because Jill already did the brain-work, has a solution and shared it with me in her book!
We're actually getting a group of ladies together at church to do what MegaCooking teaches (and although some is "freezing" NOT all of it is, and even if you don't freeze a THING, you can get SUPER SUPER "instant homemade meal" ideas).
I'd never NEVER survive without MegaCooking. With three kids, I spend less then an hour a day (breakfast, lunch and dinner) cooking because of how easy MegaCooking has made my life.
So, that's my WORKS FOR ME!

No blog, but here are my quickies:
Cream of crab soup (heat stick butter and 1/2 C flour until nutty, add paprika and chicken bullioun, add milk and stir until thickened, add crab from can, serve w/ splash of sherry)
frittata: saute one chopped onion in oven proof skillet. Add bits of veggies, cheese or meat bits as you find in your fridge (leftover sliced zucchini, some bits of turkey and some cheddar, for instance), add beaten eggs on top (like for scrambled eggs) but DON'T STIR. Let set up on stove for about five minuts, then transfer to 350 oven .... meanwhile change out of your work clothes, or make a salad .... take from oven, invert on plate and cut into wedges.

In the heart, I am from the south. Yes, my recipe has cream of mushroom soup. It doesn't have cheese, but many of my other recipes include "sprinkle with cheese," which in my house means, dump a pound bag of cheese.

Awesome! Thanks for letting me know what we are having for dinner tonight! I am from Indiana and we use cheese there too. :) The problem comes in trying to find Rotel if you still live there. Of course you use the "mildest" Rotel you can find.

****FYI**** Rotel is just diced tomatoes and green chilies. It comes in a small can usually with the other tomato products. Add it to a half chunk of velveeta and there's your second meal with tortilla chips.

I love those raviolis. We get the beef kind and always have them on hand. I have made something very similar to your beef dish when I am in a pinch. It happnes more than I like to admit.

Wanted to apologize for being the dork that missed the fact that this was themed and wrote about ridding yourself of under eye circles. I would like to say that I did it on purpose so that everyone who is up late slaving over a hot stove can look like a million bucks in the morning, but that would be a lie. Bottom line, I just messed up:)
Thanks for hosting these WFMW. They are so much fun and I got a lot of good recipes off of this themed edition. (Even if I neglected to contribute one myself!) I'll do better next time around.

My go-to is Veggie Pasta Toss:
Cook 1/2 box of penne or other short pasta to your liking.
Dice a large zuchinni (or two small ones)and a medium-sized red pepper.
Saute the veggies in a little olive oil. As they start to brown, drizzle with 3-4 tbsp. balsemic vinegar and sprinkle 2 tsp. sugar over (the sugar balances out the vinegar, and makes it just a nice tang)
Contiue sauteeing, stirring frequently until veggies start to soften. Remove from heat.
Stir in with the hot pasta and a cup of crumbled feta cheese.
This is great hot or cold (leftovers!) and also great with grilled chickn or steak mixed in.

I shared my recipe earlier on this site when the topic for this week's WFMW was first mentioned. Sorry, I guess I was ahead of the game, so here it is again.
Uncle Ben's Microwavable Rice
Peas or mixed vegetables
Prepackaged diced ham,chicken, or turkey
Heat all three items in the microwave and then combine them all together. Serve with soy sauce (or not) and you have yourself a meal in less than 10 minutes.

I totally made your recipe tonight! It was a big hit! I did end up adding a dash of wine to deglaze the pan....only because I burned the rice. I have NEVER been able to cook rice without burning it!!

I buy boneless skinless chicken breast in bulk when it's on sale, then I come home and throw a bunch in the crockpot with a can or two of chicken broth and let it simmer for a few hours. (Sometimes I do this overnight.) When it's done, I shred the chicken and cool it, then put it in freezer bags and throw it in the freezer. I reserve the broth, too, and freeze that as well.
Whenever I have one of those days when I'm too tired to cook (which is pretty much every day, as I am a busy, middle-aged, homeschool mom and part time librarian) I can throw together a casserole with the cooked chicken and some Rotel and cheese and rice or whatever, or I can do like today and reunite the cooked chicken and broth in the crockpot, adding veggies and whatever and make soup.

Thanks for the great unnamed recipe. I got to use it unexpectedly last night! For all the Yankees out there, I wanted to let y'all know that Ro-tel has been sighted above the Ohio river in Southern Indiana at a grocery called Schnucks. I don't know if they carry it at their Missouri/Illinois outlets, but it looks as if the deliciousness of Ro-tel is slowly coming North!
